Bison Nutrition

Research has shown that the meat from bison is a highly nutrient dense food becuase of the proportion of protein, fat, minerals and fatty acids to its caloric value. Comparisons to other meat sources have also shown that bison has a greater concintration of iron as some of the essential fatty acids necessary for human well being.

Grilled Bison & Roasted Vegetable Skewers

  • 1 pound ground lean Bison
  • 1/4 cup crumbled crakers
  • 1/4 cup chopped cilantro or Italian parsley
  • 1 egg white, beaten
  • 3 ounces crumbled feta cheese
  • 3 tablespoons chopped Kalamta or black olives
  • 3/4 teaspoon salt

  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 16 2-inch squares bel pepper
  • 12 8-inch wodden skweres, soaked in water for 20 minutes
  • 8 skewers of assorted vegtables, basted with flavored olive oil

In medium bowl, combine bison, craker crumbs, cilantro egg white, feta cheese, olives, salt, cinnamon, black pepper and garlic. Mix until well blended. Shape into 8 large meatballs. To prepare a skewer: altermate 4 bell peper squares and 2 meatballs per skewer. Repeat process makig 4 skewers.

To barbecue: Allow coals to burn down to ash grey. Barbecue bison and vegetable skewers for 5 minutes. Turn, baste bison skewers with flavoring sauce and grill 4-5 minutes longer or until done. Baste vegetable skewers with flavored oil and grill 5-7 minutes longer or until tender.

Preperation time: 20 minutesCooking time: 10-12 minutes
One serving = one meat skewer and one vegetable skewer

Savory Bison Oven Roasted Meatballs

  • 1 pound ground lean Bison
  • 1/2 cup finely chopped mushrooms
  • 1/3 cup finely chopped red onion
  • 1 egg, beaten
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon ground balck pepper
  • 1 teaspoon Italian seasoning

In medium bowl combine all ingredients. Mix until well blended. From into 24 meatballs about the size of a large walnut. Spreay a jelly roll pan with non-stick cooking spray. Place meatballs on pan. Roast in reheated 400°F oven for 10 minutes.

One serving = two meatballs
